Raasay’s “While we wait” seems to have all the necessary elements to be great, except that it’s all a bit diluted. The complexity is there, but the intensity and length aren’t. Maybe I’ll re-evaluate it in a few days and change my mind. Hmm.

@indigo But it does mean that a large number of people who might want to have access to high-quality meat have no way to do so.
Certainly a different culture than HK anyway, where the whole point of a shop is to be working when everyone else isn’t. // @peemee
