@indigo That's where the bone cleaver came in: I cut it in half and kept the meaty part in the cheesecloth it came in in the fridge — it just fits on one shelf. The bony part I trimmed and am currently munching through whilst I wait for the onion soup to reduce. The trimmed fat and leftover boen went into the freezer. Really tough bone though: put a good few dents in the cleaver.
Pulled the trigger a few days ago and ordered a whole leg of jamón. 7.5 kg. Arrived today. Thankful I have a bone cleaver and a few very capable slicers…delicious stuff, even at only 24 months (best I've ever had was 52 months — had completely lost any "ham" flavour and taken on a ridiculously sweet, nutty character).
