Turns out, Café Coutume is a rip off if you actually drink coffee there — they just use a pair of Bonavita Clever-style cones (paper filter in cone, close spigot, grounds and water in, steep, open spigot, serve). Paying for nothing more than the location, as there's absolutely 0 skill involved in using that device.
Won't bother ordering filter coffee next time.
